The Pfister Hotel is on the hunt for our next Sous Chef who will support us in continuing our tradition of culinary excellence.

Built in 1893, The Pfister Hotel in Milwaukee has been a hotel icon for over 130 years. As one of the best hotels in Milwaukee and the Midwest, we continue to celebrate a grand tradition of gracious service and impeccable style. The Pfister Hotel has received AAA Four Diamond hotel status for 46 consecutive years. The hotel is one of only 11 properties throughout North America to maintain the AAA Four Diamond designation since the inception of the Diamond Rating program in 1976.

What you'll be doing:

* Responsible for and supervises daily line operations.

* Prepares all food items for buffet and restaurant use according to recipe specifications.

* Visually inspects appearance of all food for proper taste, color combination, and overall presentation to maintain appeal.

* Supervises all assigned staff including training, counseling, and discipline.

* Ensures proper ordering, receiving, and storage of all food items in refrigerators, freezers, and dry food storage to maintain product freshness.

* Properly rotates food products in order to keep spoilage and waste to a minimum.

* Ensures that all equipment in work area is properly cleaned and sanitized.

* Performs other duties as required, e.g., special orders/buffet presentations.

* Schedules appropriate number of staff according to daily needs of restaurant functions and weekly forecasts.

What you will need:

* High school education preferred.

* Apprenticeship, culinary schooling, or equivalent work experience beneficial.

* ServSafe Certification preferred

* Managerial and production experience required in similar hotel or resort. 3-5 years in management of high volume production of hot and cold food, associate dining, upscale restaurants, and multiple outlet operations.

* Thorough knowledge of food products, standard recipes, and proper preparation.

* Knowledge of food and labor cost controls, and the calculation of these controls.

* Ability to multi-task and manage many projects in an efficient and timely manner.
